The HEZHEN PM8S Nakiri is designed specifically for preparing vegetables, with a broad 6.8-inch blade that makes chopping, slicing and dicing comfortable and efficient.
The blade is made from 3 layers of 10Cr15CoMoV steel, offering a good balance of sharpness, edge retention and durability. It is ground to approximately a 15° cutting angle for clean, controlled cuts through vegetables. The blade has a hardness of 58–62 HRC, providing a practical balance between edge performance and ease of maintenance.
What makes the PM8S particularly distinctive is its dark, textured blade finish. After heat treatment, a black oxide layer forms on the surface of the steel, giving the blade its naturally dark appearance. The blade is then further treated with stone washing and sand blasting, creating a fine, matte texture with a slightly worn, understated character. This combination gives the knife a unique finish while reducing the highly reflective appearance of a polished blade.
The Japanese-style octagonal handle combines redwood and buffalo horn, providing a comfortable and secure grip. Its 66.8 mm blade height gives plenty of surface area for vegetable preparation, while the relatively slim 2.4 mm blade helps maintain a responsive feel during cutting.
With its wide Nakiri profile, dark textured finish and comfortable handle, the PM8S is a distinctive choice for home cooks who enjoy preparing vegetables with a dedicated Japanese-style vegetable knife.
